Æblekage (Danish Apple Cake)

8 Apples - peeled, cored and quartered (Granny Smith works well)

2 strips lemon peel (use vegetable peeler to strip zest only)

3 Tbsp. Lemon Juice

1/2 tsp. Ground Cinnammon

1/4 Cup White Sugar

1/4 Cup Brown Sugar

1/4 Cup Raisins

1 Cup Water

1/2 tsp. Salt

1 Stick Unsalted Butter + 2 Tbsp.

1/2 Cup Sugar

1 Cup Rolled Oats

1 Cup Graham Cracker Crumbs

1 Cup Soda Cracker Crumbs

1/2 tsp. Cinnamon

1/4 tsp. Nutmeg

1/4 Cup Chopped Nuts


1. Add apples with lemon, cinnamon, sugar, salt and 1 cup of water in a large pot

2. Bring to boil on high heat then lower the temperature, cover pot and maintain a low simmer for 15 - 20 minutes, until apples are completely tender. Add raisins at the end. Remove lemon peel.

3. Use a potato masher to mash the cooked apples to make a chunky applesauce

4. In a large frying pan melt butter over gentle heat, then add 1/2 cup white sugar, stirring with wooden spoon

5. Once sugar has turned into caramel, stir in oats until they are golden and toasted (careful not to burn)

6. Remove oats from heat and add graham and soda cracker crumbs along with cinnamon, nutmeg and nuts

7. In an 8" X 8" pan, layer crumbs then applesauce. End with crumbs. Dot with remaining 2 Tbsp butter

8. Bake at 350 degrees for 30 - 40 minutes until top is golden brown

9. Serve warm, topped with whipped cream and a shaving of chocolate. You may chill for a few hours and serve cold if preferred. Both are traditional ways of serving tis delicious danish dessert
