My first trip with Shared Beat to Guatemala was in 2016. The children living in the rural areas and in the community around the Guatemala City garbage dump stole my heart. They are so full of potential and eager to learn. Poverty, poor access to any kind of health care and lack of educational opportunities stand in the way of their attaining safe and healthy futures. Kentucky Bourbon Balls

Ingredients:

  • 2 cups of pecan pieces
  • 1/2 to 1 cup of bourbon - divided
  • 4 lbs Confectioner sugar - divided
  • 1 1/2 cup of butter (3 sticks) softened
  • 20 oz dark chocolate candy melts (e.g. Ghirardelli)
  • 1 to 1 1/2 cup of pecan halves (trimmed as needed)

Instructions: Bourbon balls are made in three separate steps, each on different days

Step 1 -

Place pecan pieces in a plastic container with a lid. Pour your favorite Kentucky bourbon over the pecan pieces until fully saturated. Cover with air tight lid and let age at room temperature for a minimum of 12-24 hours. Can be left for several days before proceeding to Step 2.

Step 2 -

Combine softened butter with Confectioner sugar. Save approximately 1 cup of the Confectioner sugar to be added later to make the correct consistency. Add the bourbon saturated pecans and approximately 2 oz of bourbon to the creamed sugar/butter mixture (May add more to taste). Mix thoroughly. The mixture should be the consistency of cookie dough. Using the palms of both hands roll small amounts into 1 and 1/2 inch balls. If the mixture is sticky add more sugar. Adding too much sugar makes the mixture dry and will crumble when rolled into balls. Place the balls on a flat pan and place in a freezer until frozen. Once frozen, place the balls in a zip lock bag and return to the freezer. May be frozen for 2-4 weeks before dipping into chocolate.

Step 3 -

Melt chocolate candy melts in a double boiler over medium heat. Once the choclate is melted reduce heat to low. Take 4-5 balls out of the freezer at a time. Using two spoons, dip the balls individually into the melted chocolate. Once well-coated place bourbon balls on wax or parchment paper and top with a pecan half before the chocolate hardens. Inspect each ball for gaps in the chocolate coating. Using a table knife, cover the gaps with small amounts of chocolate as needed. Although these bourbpon balls may be left at room temperature, I suggest storing in the refrigerator until time to devour.
