Lemon Pistachio Tiramisu

Mix lemon curd & mascarpone. Softly add 1 cup whipped cream. Mix lemon juice, rum & sugar. Use four 1 cup bowls. Soak lady fingers in lemon/rum mixture for 5 seconds and place in the bottom of each bowl. 1-2 per bowl. Add 1/3 cup lemon curd mixture to each bowl. Repeat lady finger layer. Add 1/3 cup lemon mixture. Chill. To serve add a dollop of whip cream, lemon zest and crushed pistachios.

  • 1 jar lemon curd
  • 8 ounces mascarpone cheese (or whipped cream cheese)
  • 1 1/2 cups whipped cream
  • 8-16 lady fingers
  • 4 tablespoons lemon juice
  • 4 tablespoons rum
  • 1 tablespoon sugar
  • Chopped Pistachios
  • Lemon zest from 2 lemons
