Empanada de Jueyes (crab filled empanadas)

1/2 lb. of lump crab meat

2 cloves of minced garlic

1/8 cup of chopped onion (you could mix some green onion also)

1/8 cup of chopped green pepper

1 8oz can of tomato sauce

2 tbsp of canola oil

1/2 cube of chicken bouillon

1/2 tsp of salt or more to taste

1/2 tsp of black pepper or more to taste

2 tsp of capers

1 package of pastry dough disks (local grocer’s freezer section)

Directions:


In your pot heat oil on low to medium heat, and sauté the garlic, onions, and green pepper until soft (a couple of minutes.). Then add your crab meat along with the tomato sauce and capers. Cook for about 30 minutes on low heat, so the flavors incorporate. Stir occasionally, taste and decide if you need to add more salt or pepper. Once crab filling is done, you are ready to assemble the disks. Put a heaping tablespoon of crab filling in the middle of the disk, fold in half and then crimp and seal. You are now ready to deep fry the empanadas in your electric fryer for about 2 minutes on each side. They should be a golden brown color. You can also make the empanadas in an air fryer. Cook them approximately 5 minutes per side.
