This is our spin on Costa Rica’s famous cocktail, the guaro sour. When we visited Costa Rica in 2017, we took a great mixology class where we were introduced to new spirits and techniques. With what we learned, a few duty-free bottles of new favorites, and a little tinkering, the Costa Rican Lime Pie Cocktail was born. It tastes just like a slice of key lime pie!

1. Rim a glass with simple syrup and then crushed graham crackers. This is optional but tasty!

2. In a cocktail shaker, combine 2.5 ounces guaro (brand name Cacique; if you can’t find guaro, substitute vodka or white rum), 1 ounce Licor 43 (available in nice liquor stores… SO good!), 1 ounce simple syrup (to make your own, heat 1 part water with 1-2 parts sugar (dash of vanilla if you want) and let cool), the juice of 1 whole, large lime, and 1 pasteurized egg white. (We don’t recommend leaving the egg white out because it makes a silky, meringue-like foam on the top of the drink that balances the sour. Try it at least once. We think you’ll be hooked!)

3. Shake the mixture vigorously for a bit (about 15-20 shakes). This is the “dry shake.” Add some ice cubes and shake again. Pour into your glass, making sure to include the foam that has formed in the shaker. (We also recommend including the ice from the shaker.) Top with fresh lime zest. Enjoy!
